My grandma is from the South. Mostly young childhood in OK.
Her cooking is amazing. Actually, capital A. The kind of food that's comfortable, soulful, and meant to be shared with a huge group of family.
Peach Cobbler. My favorite dessert.
I would give up cake for this cobbler.
This past week, whilst in Houston with my sister, we decided to make it for the first time.
It went terribly awry.
It turned purple. I blame her dumping of fruit into my first cobbler..
Upon my return to California, I decided I would not be defeated by a recipe.
I conquered it.
I recommend you to do the same.
Ima Jean's Peach Cobbler
[meant for a small, square glass pan]
1 stick of butter 3/4 cup of sugar
1 cup of flour 2 tsp. baking powder
3/4 cup of milk 1/2 lemon
2 cans of sliced peaches
Preheat the oven to 375 degrees. Place the stick of butter in the pan, and let it warm up in the oven.
Mix the sugar, flour, baking powder and lemon together in a bowl. The consistency should become about like that of cake batter.
Pour the batter into the pan that was heating in the oven.
Pour the cans of peaches on top of the batter.
Now, I wouldn't use all of the juicy syrup that comes in the can. Pour about half of the syrup into the sink, and save the rest to make the cobbler better.
The batter will bake up through the peaches. Trust me.
Squeeze the half of the lemon over the top of the cobbler.
Feel free to also sprinkle some sugar over the top.
Bake for 60 minutes.
Serves a whole lot of love.
